This is one of my favourite sweet dishes made during the Monsoons when big green cucumbers are widely available in the entire Konkan area. My daughter Madhura and grand daughter in law Kanchan love this dish.

Step 1
Preheat oven to 350℉
Step 2
In ghee fry rava for 10 min
Step 3
Add grated cucumber, mix well; add coconut, jaggery, and cashew nut and mix well
Step 4
Add some milk to moisten mixture; stir and mix well (it should come together as a thick wet mixture); add elaichi powder
Step 5
Take an oven-proof baking dish, grease it and pour the mixture in it
Step 6
Spread it evenly; add a little ghee on top and sides
Step 7
Bake in oven for 20–25 min (till it is slightly brown on top and it separates from the side of the dish)
