It was during my days in Cochin, we had two Parsi ladies from Bombay visit the Cochin Club and demonstrate 4 different dishes to the club members. The Hawaiian Tart was one of them and became a staple in our household as a dessert at dinner parties. Though it is called a tart, it is a moist cake and can be enjoyed as an after-school snack, an accompaniment with evening tea or as a dessert served with vanilla ice cream

Directions
Preheat oven to 350℉
Mix flour, salt and soda and sieve well
Cream butter and sugar together; beat in the egg; add pineapple and vanilla
Add flour mixture and mix well
Grease 9” square pan or use parchment paper to line pan; pour batter into pan
In a bowl, mix topping ingredient well; add over batter
Bake in oven for 35-40 minutes
Cool over rack
Enjoy it with tea or serve with whipped cream or ice-cream as dessert
