TOMATO GOJJU

If you are in the kitchen, and not sure what to make for breakfast, a last minute solution is to make Tomato Gojju and serve with hot buttered toast. It could become as famous as Avocado Toast. Gojju is simple to make and its sweet sour taste is super. In Karwar we used to eat chaklis dipped in gojju and it was an irresistible snack.

    Step 1

    Heat oil in a saucepan and add hing and rai

    Step 2

    Lower heat when rai splutters; add jeera and methi seeds

    Step 3

    Next add curry leaves and dry red chilies and stir for a minute to fry them

    Step 4

    Add chopped tomato, jaggery, salt and cook on a low heat for 15 mins till tomatoes are pulpy and ⅓ of the water has evaporated, stirring off and on

    Step 5

    If using tamarind, add and cook for a couple of minutes more to cook the tamarind

    Step 6

    Remove from heat

    Step 7

    Best eaten with thalipeeth or parathas
