When I had to make a snack for my bridge and rummy groups or tea time visitors or as an after school snack these vadas were very easy to make and crisp and delicious to eat. In South Indian cuisine these vadas are served as appetisers before the main meal or as an accompaniment to the meal

    Step 1

Soak chana dal, urad dal and rice together for 4-5 hour. Drain and grind coarsely with green chillies and ginger

    Step 2

Add very little water while grinding

    Step 3

Add kala masala, coriander leaves, onion and salt to the ground dal mixture and mix well to make batter (it should not be too dry)

    Step 4

Make small balls and deep fry in hot oil

    Step 5

The outside should be crisp but the inside should remain soft

    Step 6

    Serve with chutney
